Mexican Rainbow Sprinkle Cookies – Galletas de Grajea – This is a Mexican cookie (pan dulce) that you’ll often see in Mexican bakeries. Today I’m showing you a much healthier version that is vegan, gluten free and grain free. This video is a quick DIY tutorial on how to make a plant based snack that is especially good for diabetics or weight loss. I use protein powder in making this cookie and I use a low gi sweetener which makes this a great cookie for diabetics. It also makes a great snack for those of you who like eating high protein snacks after a workout. So this particular recipe is a good snack or dessert for diabetics, weight loss or anyone who likes a good cookie.
