Heyy here are 2 recipes/ideas of finger food you can bring to a party or just for your own, or even to grab and go or pack in your lunch box. 1. SUSHI HAND ROLL
Ingredients : Nori sheets / rice paper – overcooked rice (I just put a bit too much water on purpose and let it absorb, so that way it’s sticky and I don’t need to add sugar or buy fancy rice !) – veggies of choice + tofu if you like (im thiking avocado and cucumber but my fridge said capsicum & carrots hahaha), sesame seeds.
Instructions : Cook rice. Spread nori sheet and wet your hands. Spread the rice all over on a pretty thick layer.. (actually not ALL over, do leave a thin band at the end). Sprinkle sesame seeds. Stack the striped up veggies and roll the roll (lol). cut the end bits and cut in half! For the rice paper, do the same except start by sesame seeds, and spread rice halfway and fold the end of the paper.
Sush a lazy sushi but it’s so great to grab and bite !!! I always ate them in Australia!!!
2. VEGAN PIZZA FLOWER
Dough : 250g flour – 150ml water + around 10ml – 1 packet bakers yeast – salt (lots cause there is a lot of dough and if its not salted it wont be good!) – 1tbsp olive oil = activate the yeast with 10ml warm water. mix four, salt, oil and yeast. Work with your hands until it doesnt stick to your fingers anymore. roll in a ball and let it rise covered, in a warm area at least 1 hour.
Passata – dried herbs – tomatoes (im thiking cherry would be bomb! sundried too !!!) or other veggies (do remove excess water in tomatoes tho!!) – vegan mozza (blend then cook : 1/2 cup soaked cashews, 1 tbsp lime juice , 1 tsp apple cider vinegar , 1/4 tsp garlic 2 tsp tapioca starch 1/2 tbsp nutritional yeast, salt, 3/4 cup milk and 1/4 cup cooked onion. (blend till super smooth then cook.. if grainy, blend again!)
Instructions : Roll out the dough in rectangle shape. Spread passate, mozza, herbs, veggies. Roll and put in muffin “tin”. add more herbs and olive oil. Bake 20 min / 180C (approx)
