Chickpea Cookie Dough and Cookies | Vegan | Gluten Free

Cookie Dough Ingredients:

2 1/2 cups cooked chickpeas (If you are cooking from raw, make sure to soak them in water overnight)
1/2 cup peanut butter
3 teaspoons vanilla extract
8 TBLS maple syrup
1/2 cup vegan sugar
1/2 cup chocolate chips
Tiny pinch of Himalayan pink salt

Put all of the ingredients except chocolate chips in a food processor and process until smooth. Stir in chocolate chips by hand. Ladle into casserole dish or container. Refrigerate and enjoy.

Cookie Ingredients

1 3/4 cups cookie dough
3/4 cup gluten free oat flour
1/4 cup ground flax
3 TBLS coconut oil

Mix all of the ingredients in a food processor. Then roll into balls and place on parchment paper on a cookie sheet. Slightly flatten the cookies if you like.

Bake at 385F for about 35 minutes. Cool and enjoy.

    It just somehow funny and sad at the same time that you have to say “vegan sugar”. Here sugar is always vegan! I hope it will be like that soon there as well!
