Welcome to episode #31 in my What I Eat in a Day series! Today I’m going to show you how to make a delicious vegan pumpkin bread, as well as a brand new quinoa pizza crust recipe! All these recipes are gluten-free, vegan and super healthy!

RECIPES:

– VEGAN PUMPKIN BREAD –

– EVERYDAY VEGAN PESTO –

– QUINOA PIZZA CRUST –
3/4 cup quinoa flour
1/4 cup quinoa flakes
1 tablespoon psyllium husk powder
1/2 teaspoon baking powder
1/4 teaspoon salt + pepper
1 cup warm water

Preheat the oven to 400ºF and line a baking sheet with parchment. In a large bowl, whisk together dry ingredients. Stir in warm water and mix until a sticky dough has formed. Transfer dough to the baking sheet and bake for 20 minutes. Remove crust and top with sauce/pesto and toppings, and return to the oven for another 10 minutes.

  2. I made a gummy banana bread last weekend. 😱. Smelled good but yuck. Hope you can get it to turn out. Pizza looked amazing. I love fennel in salads but putting it on pizza looks really good too! Thanks for the video.
